Part of this reason might have been living in a home with a kitchen I dreaded (a stove that worked part-time and unpredictably), along with not very much work room to prep. Most of the reasoning was the thought of having one more thing on my plate to think about at the end of the day. So I got lazy.
And then we moved....and THIS is my kitchen!

And guess what? The magic is back. I am a cooking machine. My first week in the kitchen I busted out 5 casseroles and threw them in the freezer. I've never even made a casserole before, but I was on a mission.
Yes, this post might be somewhat inspired by my recent viewing of Julie&Julia and my secret desire to have a successful blog that people actually read. But, none-the-less here it is.

Sounds delish! If you want any recipe ideas, check out Fat Free Vegan Kitchen (google search). This woman has a lot of interesting ethnic recipes, dishes are full of veggies.
P.S. Your kitchen is AMAZING!! That might be my motivation to get back to Portland sooner rather than later! Miss you!
